
Rhubarb Muffins with Cinnamon Sugar Topping
Ingredients:
2 1/2 cups flour
2/3 cup brown sugar, packed
3 tsp baking powder
1/2 tsp salt
1 cup milk
1/4 cup oil
1/2 tsp vanilla
1 egg, beaten
2 cups finely chopped rhubarb
Cinnamon sugar – 1tsp cinnamon mixed with 2 Tbsp white sugar
Method:
Heat oven to 180 degrees; grease or paper line 12 muffin cups. In a large bowl, combine flour, sugar, baking powder and salt. Add milk, oil, vanilla and egg. Stir just until dry ingredients are moistened. Fold in rhubarb. Divide batter between muffin cups. Sprinkle tops liberally with cinnamon sugar. Bake for 20 – 25 minutes, until light golden brown.

Yumm-O!!! Get out the baking trays and stock up on some of these for when I come! Haha. I’ll have some of that sushi too.
I think I’ll give these a go tomorrow, they look delicious! And I’m trying not to eat chocolate so need something else sweet to take my mind off it.
